How to Eat Bitter Kola: Peel It, Then Eat It Bite by Bite

If you have just bought your first bitter kola, you may be holding a small brown nut and wondering what to do with it. This guide shows you how to eat bitter kola the traditional Nigerian way: how to peel it, how to eat it bite by bite, and how to serve it to guests.

What you need

Whole bitter kola nuts. Bitter kola is the seed of Garcinia kola, a tree that grows across the rainforest belt of West and Central Africa. In Yoruba it is orogbo, and in Igbo it is aku ilu.

Do not confuse it with kola nut. They are different nuts from different trees. If you are not sure which one you have, read Bitter kola vs kola nut.

How to peel bitter kola

Bitter kola has a tough outer skin, not a shell. Peel it off before you eat the nut. There are three ways to do it:

  • With your fingers. Pick at the skin and pull it away.
  • With a small knife. Lift the skin and peel it off.
  • With your teeth, the traditional way. Hold the bitter kola against your teeth and gently remove the outer skin, layer by layer, until the fresh nut underneath is exposed.

How to eat bitter kola

Once it is peeled, you eat the bitter kola whole. You do not have to break it into pieces first.

But you do not have to put the whole nut in your mouth at once either. The way many Nigerians prefer is to eat it bite by bite:

  • Hold the peeled nut in your hand.
  • Bite off a small piece, chew it slowly and swallow.
  • Bring the rest of the nut back to your mouth, take another bite, and carry on piece by piece until the whole nut is finished.

This is practical, because bitter kola has a strong, naturally bitter taste. Eating it little by little lets you take the bitterness gradually. As you chew, a sweetness comes up behind the bitterness and stays. Some people compare the aftertaste to liquorice.

If you are learning how to eat bitter kola for the first time, start with a small bite. Putting the whole peeled nut in your mouth is not wrong. It is simply not necessary, and many people prefer the bite by bite way.

How to serve bitter kola to guests

How you serve bitter kola matters as much as how you eat it.

When serving African guests, serve bitter kola whole and unpeeled. Place the whole nuts, skin on, on a clean serving plate. Each guest picks one, peels it themselves and eats it.

Do not peel the bitter kola before you serve it. To an African guest, being handed bitter kola that has already been peeled can feel unfamiliar or inappropriate, and in some settings it may even be taken as offensive. Receiving the whole nut, peeling it yourself and eating it is part of the traditional experience.

Do not confuse this with kola nut. In Africa, kola nut is the one that is offered, broken and shared among guests. Bitter kola is served whole, and each person peels and eats their own.

How kola nut is served. The kola nuts are presented whole in a bowl. The eldest person present is asked to pray over them. After praying, the eldest breaks the kola nut and takes a piece first. The youngest person in the room then takes the plate from the eldest and serves everyone else in order of age, from the oldest to the youngest. Never serve the youngest first. In Nigeria that is considered an insult.

For friends who have never had bitter kola, show them first. Peel one in front of them, including the option of peeling it with your teeth, and explain that eating it whole, bite by bite, is the traditional Nigerian way. If they would rather try a small taste, cutting a nut into pieces is fine as a convenience. Just know that the whole nut, peeled and eaten bite by bite, is the traditional experience.

Serve bitter kola whole and unpeeled to guests

Three common mistakes

  • Mixing it up with kola nut. Kola nut is broken and shared. Bitter kola is eaten whole, one nut each.
  • Serving it already peeled to African guests. Serve it whole, skin on, and let each guest peel their own.
  • Taking the whole nut in one go on your first try. It is not wrong, but the bitterness is strong. Bite by bite is easier.

Want to cook with it instead?

Whole nuts are for eating and for guests. For soups, stews and drinks, the powder is easier: the grinding is done and you can measure it. See Bitter Kola Powder, 4 oz, and for ideas read Bitter kola uses: how to cook with bitter kola powder.
