Ground crayfish is a savoury base used across West African cooking. Stir it into soups and stews such as egusi, okra soup and pepper soup, or use it to taste in your own dishes.
How to use it
Stir it into the pot while soups and stews cook. It goes into egusi soup, okra soup, pepper soup and jollof rice. For a family pot, start with about a tablespoon and add more to taste.

It seems to me that some of the reviewers that gave this an unfavorable rating were put off by the scent – but that they weren’t familiar with the product to begin with and didn’t actually have a use for it. I did not find it “too fishy,” and find it to be a great addition to a soup base or ethnic cuisine – easy to use, and a little goes a long way. It comes in a notched top that tears off, enabling a zip closure to keep the product secure.

In West Africa, dried crayfish is used as a seasoning and it’s health benefits from Omega3 fatty acids to vitamin B12 is known.
I recently added JEB FOODS Crayfish West Africa Seafood Dried to a dish I prepared and for the most part, it’s what I expected.
For some, the smell may be too much for people but for some people, especially Filipinos who are familiar with bagoong (fermented fish or krill with salt), it has a similar smell and adds that same type of taste with less of the salty after-taste.
I actually liked how it tasted on top of my vegetable stir fry and will want to experiment with a rice dish.
But what I enjoyed, because I grew up with that seafood smell from dishes my family had prepared, I can’t say the same for my wife and son who haven’t and thought it was too overpowering as the smell reached our living room. With the exception of my pug, but then again, he always hangs out in the kitchen when I cook, now that I think about it.
But overall, if you want to experience West African recipes or used to eating Asian dishes with fermented fish/krill, definitely give JEB FOODS Crayfish West Africa Seafood Dried Crayfish a try!

I haven’t found a lot of recipes for dried crawfish, but the recipes for dried shrimp work just fine, and I can add some to any Cajun or creole recipe that includes seafood (most of them). It’s healthy food that’s not particularly perishable. We used to have crawfish bisque with stuffed crawfish heads, and so I’m hunting for a good recipe for that. It has a strong smell, but that goes with the territory.

I’ve been mixing this with dry mealworms for my backyard chickens.
They seem to like it.
Couldn’t bring myself to try it due to the overwhelming fish smell.
Probably a wonderful product, but I couldn’t bring myself to try it.

Good crayfish, love that it’s already ground. Yes it does have a strong smell but it’s supposed to, best place to store it to keep it fresh is in your freezer, you’ll get a longer lifespan out of it.

This is a high quality and exceptional product! I’m an avid chef and foodie and was excited to try this product out. I use this mainly to fortify seafood stocks, sauces, and soups. My maiden voyage with this was making a shrimp gumbo from scratch in which I made a stock from boiling the shrimp heads and shells. The shrimp itself only has so much to lend to a stock so I used about 1.5-2 cups of the powdered crayfish for a stock that reduced down to 1 gallon. Stock was much more flavorful than ever before!
This is a very fine powder with a potent flavor and aroma, but they do not dissolve completely. In a soup it would work fine as an adjunct without any noticeable texture change, but for sauces and stocks I recommend straining the crayfish sediment out before use/eating. The crayfish powder imparted its flavor into my stock and I strained it out after the stock had reduced to get maximum flavor.
The bag it comes in is formidable and resealable. I’m extremely happy with this product and I have nothing negative at all to say!

The JEB dried crayfish product was an unexpected treat. Personally, I really enjoy shellfish. So while I had no experience with the product I was very curious to try it. After a bit of Google searching to get an idea of how to use the product I found out it is a West African ingredient.
Up front, the appearance and texture is a lot like Japanese dried bonito flake but it has a SIGNIFICANTLY stronger aroma. Some has described it as fishy but this isn’t quite right. It smells like dried shrimp. If you have spent any time on the US Gulf Coast you will recognize the smell. Tasting some of the dried product it doesn’t have the same fishy flavor but packs an ENORMOUS umami punch.
To try and keep things a bit familiar for my family, I tried a recipe for black eyed peas I found on the ‘Eating Nigerian’ website. If you are familiar with black eyed peas you know they are often paired with smoked pork whether it be hocks, trotters, or bacon. The JEB dried crayfish replace that component. The recipe called for 1 tablespoon.
I was a bit doubtful at first but after tasting the finish black eyed peas, it was delicious. Like I said earlier, the crayfish pack an enormous umami flavor. One tablespoon easily replicated the same deep umami flavor as smoked pork. You could pick up some traces of the shrimp flavor but it was very light. If you were not looking for it you might not even notice it. As a side benefit, there was a lot less fat in the peas.
So, I am excited to keep experimenting with this product. It is a really neat ‘tool’ to have in your kitchen.

This is one of those products you’ll either love or hate! I’m a big fan of ethnic foods, and have just started exploring West African foods, and wondered how I’d fined ground dried crayfish (shrimp, really), It’s a pretty strong smell, but adds a special touch to Nigerian ‘fufu’ dishes.

Look, this isn’t my kind of food. I thought it might be interesting, but it’s just weird and unappetizing. But, my understanding is that it’s a cultural food that is especially used in African dishes and that it seems to be a good quality product. If you’re not making dishes that use this, you’re probably not going to find much use for it. If you’re making dishes that use dried crayfish, this seems to be good stuff.

This is a great way to get some protein on foods like salads, cottage cheese, or other low protein diet foods. A favorite is cottage cheese with tomatoes with this sprinkled over the top. It adds texture without the overpowering taste that can occur when cooked. I have wanted to try adding this to cooked rice (after the rice is cooked) which I think will be a great way to eat this protein-packed food.

I enjoy trying new foods, and when JEB FOODS offered both their dried Crayfish and Egusi ground melon seeds to try, I was intrigued. I looked online and found many Nigerian soups and stews which incorporate both ground crayfish and egusi, and tried a recipe for Nigerian Egusi Stew (see pic of this JEB FOODS ground crayfish next to JEB FOODS Egusi). I had to substitute several items: chicken for the beef (that’s what I had), coconut oil for the red palm oil, spinach for the bitter greens, but i was happy to have the actual ground crayfish, which isn’t a typical ingredient you find at the supermarket here.
Making this stew, I used about 1/3 a cup of the ground crayfish, which tastes and smells like what you would expect dried seafood to taste and smell like, and it is lightly salty even without any added salt. The stew itself had a hearty feel and pleasant taste, and felt very home-y, like something you’d find very satisfying, esp. if you grew up eating this. I don’t have much to compare this particular brand’s crayfish with any other brand, but it came in a finer grind and added a umami-type flavoring that gave a good depth to this tasty stew. I think the crayfish is an important ingredient for the stew, and it would not have tasted nearly as good without it. The way I view this seasoning is as one might use or think of anchovies- they are strong on their own, but they bring out and amplify the savory flavors in a dish.

Personally, I don’t eat any animal that has more than 4 legs or lacks legs completely but my wife does and she absolutely loves it. Mixed in a salad, these babies add lots of protein, flavor and much more good stuff or that’s what she said. Seriously, anyone into delicious insects or small crustaceans should try these because people in the know love them.

Being from a native of a Caribbean island I love making dishes using crustaceans. From stir fries, soups to rices you can use seafood seasonings to add more of a seafood taste your dishes. I often use shrimp bouillon, but this was my first time using ground crayfish. I make a shrimp and Crayfish meat rice is that out of this world and when I used this in the Cajun seasoning base it gave it more of it more “meaty” taste.
After reading some of the other reviews I also decided to try giving it to my chickens. However since it has a grounded fine texture it was difficult for them to pick up, so I mixed it in some mushy white rice and they had a wonderful feast. Great protein treat for them.
