Yes, JEB FOODS Sun-Dried Cassava contains 38 grams of carbohydrates per 100-gram serving. What Minerals does JEB FOODS Sun-Dried Cassava flour has?
JEB FOODS Sun-Dried Cassava flour is rich in minerals such as calcium, phosphorus, manganese, iron and potassium.  A 100-gram serving of JEB FOODS cassava flour contains 16 milligrams of calcium, 21 milligrams of magnesium, 271 milligrams of potassium, 27 milligrams of phosphorus and 0.4 milligrams of manganese. It also has 14 milligrams of sodium, 0.3 milligrams of zinc and 0.3 milligrams of iron.

Is there a difference between Cassava Flour and tapioca starch?
Yes, Cassava flour is the whole root, simply peeled, dried and ground to flour with all the nutrients and minerals in it. While Tapioca is just pure starch extracted from the cassava root through the process of washing and pulping. The wet pulp is then squeezed to extract a starchy liquid. Once the starchy liquid has been dehydrated the tapioca flour remains.

Does JEB FOODS Sun-Dried Cassava Flour Smell?
To maintain the integrity of the Cassava flour we sun-dried for days for natural fermentation to occur,  this gives the flour a slight cassava root smell. The smell can be described similarly to how cold press coconut oil will have a coconut smell. If smell an issue then we recommend you try our JEB FOODS Oven-Dried Cassava flour.

Is JEB FOODS Sun-Dried Cassava Flour "Gritty"?
Yes. Cassava root has a high fiber content which gives it that grittiness. Many of our customers report that they don’t mind the grittiness but for those that do we recommend our JEB FOODS Oven-Dried Cassava flour. Through our proprietary process, we were able to achieve a high percentage of granulation.

No, the moisture content in our sun-dried cassava flour is slightly higher than oven-dried varieties. Therefore, the amount of water needed is less.

Jeb Foods Sun-Dried Cassava Flour Recipe

JEB FOODS Sun-Dried Cassava Flour BREAD

1 cup almond flour
1 cup JEBFOODS cassava flour
1 tsp baking soda
3/4 tsp salt
1/4 cup olive oil
1 tsp apple cider vinegar
4 heaping Tbs honey
6 eggs, beaten

1. Sift the flours, then  
2. Whisk together both flours, the baking soda and salt into a mixing bowl.
3. In a separete mixing bowl, beat together the olive oil, apple cider vinegar, honey and beaten eggs.
4. Using a mixer, blend dry ingredients with wet  ingredients until creamy.
5. The mixture will be runny. 
Put in a well oiled loaf pan at 350 degrees 25-30 minutes until browned on top. 
Let cool 5-10 minutes in pan.

This bread can be used for sandwiches. It freezes well also. 

JEB FOODS Sun-Dried Cassava Flour PANCAKES

2 eggs
2 1/2 cups buttermilk
1 tsp. baking powder
2 cups JEBFOODS cassava flour
2 tsp baking soda
1/2 tsp salt
1 Tbs coconut oil, melted
    or olive oil

1. Whisk together flour, baking soda, baking powder,  and salt.
2. In a separate bowl whisk together eggs and buttermilk.
3. Combine wet and dry ingredients, stirring well. 
4. Heat a lightly oiled frying pan or griddle over medium low heat
5. Scoop or pour the mix onto the heated pan
6. Brown on each side and serve hot



1 cup JEBFOODS cassava flour
1/4 cup almond flour (or more cassava flour)
1/4 tsp salt
1/2 tsp baking powder
2 Tbs coconut sugar
1 Tbs cocoa
1 cup chocolate chips
2 eggs, room temperature
1/2 cup butter (one cube, softened )
4 Tbs coconut sugar
1/2 cup milk (almond or coconut fine also)
1/2 tsp vanilla

1. Combine flours, salt, baking powder, coconut sugar, cocoa, chocolate chips.
beat butter and sugar and cream together, mixing well.
2. Add eggs, one at a time, beating after 
each egg.
3. Add flour mixture, alternating with milk and mix well.
4. Add vanilla.
5. Pour into muffins tins lined with muffin papers. 
6. Bake at 350 degrees 12-14 minutes.

These muffins tend to stick a bit to the paper so if you run a knife down the edge of the paper they release nicely!
